Arroz con pollo (rice with chicken)
Ingredients:
- 1 lb. of rice
- 1 chicken 3 to 4 lbs.
- 1 can peppers
- 1 onion
- 3 tbsp. butter or oil
- 1/4 olives
- 2 garlic cloves
- 1 can tomato paste
- 4 large bell peppers
- 1 cup peas
- 4 cups water
- Salt to taste
Directions:
Clean the chicken and cut into portions; sauté in hot butter, add chopped or ground spices, water to cover, the tomato paste, let it soften.
Remove chicken from the sauce, remove the bone and cut in pieces not too small, chop the peppers into thin strips.
Prepare rice in the same sauce that the chicken cooked, reduce heat and allow to soften. Add all the ingredients: the peppers, chicken, peas,olives. Mix and serve.
